AU History:
Levi grew up in the poorest district of Union. When he was born to two non Enlightened parents as an Enlightened, his mother couldn't take the stress of raising him and abandoned him at the Church of Savior when he was ten or eleven and she was never found again. As he was Enlightened, Levi was taken good care of, but his rough upbringing in the slums of Union had taken their toll on him, making him crass and angry and rude. When he was sixteen, he snuck off from his caretakers and went back to where he grew up, starting to live and run with a gang there. They weren't much more than vandals and punks, but eventually Levi became the leader. One thing led to another and eventually he was arrested and, upon seeing his Enlightened abilities and skills, given a choice. He picked the Guard over prison and steadily moved up the ranks, finding a place for himself in normal society. After a few years of performing his duties, he became a Ranger and has been working as one ever since.
Canon Personality:
It’s implied that Levi has had a very hard life, growing up without parents in Wall Maria where the world is warped by violence and poverty. Levi appears dead inside, depicted with a near constant poker face no matter what happens, and seems very uncaring to the suffering of others. This changes, however, when it comes to the men and women in his command. Levi fights with them, would die for them, and trusts them with his life. This is shown in his first scene, when a soldier is mortally wounded by a Titan, only saved from being swallowed by Levi swooping in and killing it, who asks Levi if he had been a help to humanity. Levi takes his bloodied hand and assures him that his will would live on to will him (Levi) forward. He in no way undervalues human life, despite his cold demeanor. Another reason this scene is so powerful is that Levi has a form of mysophobia (a pathological fear of contamination and germs,) where he can’t be dirty under any circumstances, and everything has to be put in its own place. Holding the bloody hand of a dying comrade shows he’s willing to do anything for those who would do anything for him.
His mysophobia is shown in many ways throughout the series (mostly in comical, “anime” ways,) the biggest being when the Special Operations Squad comes to an old castle fort within the overtaken Wall Maria and it’s dirty, so Levi dons a headscarf and mouth cover along with gloves to keep it tidy, shouting at the other members that they haven’t cleaned properly and to do it again. He also has an obsession with killing Titans in one clean hit, to keep blood from getting on him. When he comes to meet the cadets in their new headquarters and Eren is running around getting everyone to clean, he still manages to find dust under the table. Levi expects order and discipline, which makes the military ideal for him but it also tends to push other people away with how cold and standoffish he is. He’s uneasy to be around, but very loyal and trusting in his fellow soldiers. Despite his shortcomings(hahA) Levi isn’t just the swearing, blunt, jerkass façade he portrays. He has a lot of care and passion for his team, and he doesn’t want anyone to die.
Using this façade, he keeps from getting too attached to anyone, as so many men and women in their legion die every day, on every mission outside of the walls. While he appreciates and respects every soldier who dies for their cause, it affects him deeply to know that he was their commanding officer when they die under his watch. He distances himself from others to keep the loss from hurting even worse than it does. While he may never admit this, who could blame him when thirty percent of their active soldiers come back into the wall dead? In the anime, we're shown that he keeps the winged emblems from fallen comrade's jackets as mementos.
Levi will respect you, if he deems you worthy enough. The only person in the entire military (and possibly the entire home world) that Levi will take direct order from is Commander Erwin Smith. There are plenty of people higher rank than Levi and Erwin both, but Erwin is the only one he'll listen to. "Whatever. I trust your decision." Levi genuinely respects Commander Smith and would follow him to the end of the earth. No one else gets that treatment. If you have a high level of aptitude for fighting, and your skills are impressive, Levi might notice you, but you won't gain his respect simply by existing. He also does not differentiate by gender. In his world, it doesn't matter if you're a man, a woman, or a whatever-- if you're good at something then you are. If you fight, you're a good soldier. The only difference is while he'll tell a man to fuck off right away, he'll give a woman a tiny gap leave to see if she's a bitch or not.
Levi has a huge tendency to swear and use vulgarities during conversation, and only seems to stop this when giving reports or talking to superiors. His style of speech is also rather loose for a man of his rank, perhaps another call back to his dark past in the underground. He also has little respect for those who live in the Interior (Wall Sina and to a lesser extent, Wall Rose,) as well as the Military Police, anyone who values money and greed and security over trying to rid humanity of its worst fear. This, along with his blunt, expletive riddled way of speaking, makes him incredibly hard to get along with. In my headcanon, this also gives rise to a foul mouth, and no care for how he speaks. 'We ain't gettin' nowhere with this,' etc. I also doubt that Levi can read and write very well, given his time period and his upbringing.
Levi's relationship with Eren (the Main Character) shows us that he's not necessarily the 2edgy4u tryhard that he might be thought of as by people who don't know him. When they meet, Levi's entirely unimpressed by Eren and that really doesn't change, but knowing that Levi's known as a stonecold badass when you see how he treats Eren makes it apparent that he's really not as cold and stuff as it seems. When Eren is on trial for being a Titan, Levi's the one who gets him off the hook and into Scouting Legion care. Of course he does this by kicking the shit out of Eren in front of the whole Military Court, and may or may not have been staged by Erwin Smith, but it shows that Levi is ready to go to lengths for his division and save Eren's life at the same time. Despite not knowing enough about the military in canon, if someone were to jump over the barricade and beat up the accused in a court of law, that person would end up being tried as well for misconduct and assault. We can only assume it's the same in Shingekiland. Levi doesn't care about this, or he has enough respect (?) as the World's Strongest Soldier that no one is going to tell him off about it. He boasts that the only way to teach anyone respect is through punishment, but it's almost guaranteed that was for show and for the court to think the Scouting Legion would treat Eren like shit. Later on, Levi spends a lot of time with Eren both at home and out on missions. He talks with him and he cracks stupid jokes to make the immature fifteen year old laugh. He lets Eren make his own decisions and while he may not agree with him says that the only thing they can do is hope they don't regret the choices they make. Levi also goes on saying that he thinks of himself as a very amicable person and that he loves to talk. This entirely contradicts that he's so grumpy and deadpan, and makes the others he's sitting with when he says this laugh at him. Levi has trouble identifying with others, but it's not for a lack of trying. He's super awkward about it, but he does his damnedest to make others comfortable. When death is all around you, a couple of shit jokes to lighten up a grim discussion are pretty welcome.
Levi's Squad is another example of Levi not really being the crass asshole he portrays to many. Though Petra comments that he's rude and grumpy and not what people would expect, he still cares deeply for his squad and it's obvious in both the manga and the anime, where they expanded on his relationship with his men. He jokes around with them, and while he might bark orders you have to remember that he's their commanding officer and he has to. On their downtime, he's genuinely involved in conversations both serious and silly. Most of his squad are younger than him, but he never treats them like subordinates. When they die, it's the first reaction we get from the lance corporal. He looks desperately sad to see them dead on the ground, and when facing the Female Type Titan, who killed them all, Levi fights so hard and so recklessly that he hurts himself for the first time in canon. Levi's emotions are vast.
AU Deviation:
Levi is a little more selfish in this AU, since he isn't used to seeing people die all around him. He also doesn't have a head figure he respects completely (unless an Erwin were to app in,) so he's going to be a bit more punkass than mature military air cop lance corporal dude. He's also a bit younger, only 25.
Canon Abilities:

Levi's official stats. In another official stat image, his Cleanliness was listed at 11/10.
Levi portrays a high level of physical aptitude, being the best soldier in the whole military and very physically fit. He’s perfected the 3D Maneuver Gear, partially due to his short, slight stature as it is easier for female soldiers to operate, and is the fastest and deadliest when it comes to killing Titans. He has no super powers, or anything like that, but his strength and agility are second to none.
As for weaknesses, Levi perhaps cares too much for his soldiers. When his squad is killed by the Female Type Titan, Levi shows emotion for the first time and ultimately gets hurt while trying to take her down due to his anger. He is also shown, later on, wanting to take down a Titan chasing them in an open field but cannot due to his broken leg. He then makes the painful decision to dump the bodies of their fallen comrades to be able to travel faster and get out alive. While he knows what he has to do, as a commanding officer and a member of the Scouting Legion, it hurts him terribly to make those decisions.
Levi has no filter. He's crass and foulmouthed and that's about it. He's also... well, he's "The World's Strongest Soldier" in canon and this gives way to him being... pretty over powered compared to everyone. I tone this down a lot, but his "gary stu levels" are pretty... canon so if that's too much I understand.
Enlightened Abilities: Dark/Flying
Levi is a Shifter type Enlightened, who takes the form of a shiny Murkrow. He's had feathers in his hair and a plume of tail feathers since he was born, gradient black purple, but he's just recently sprouted talons on his toes and fingers with scaly bird skin around them. Besides that, his eyes are pink instead of grey, mimicking his Pokemon's form. He'll begin with the moves Peck, Pursuit, Astonish, and Wing Attack.
He'll eventually "evolve" into a Honchkrow and get bigger plume and hair feathers and claws.
Starter Pokémon: A Venipede aptly named "Bug".
Notes/Special Considerations:
1) Possibly very high up in the Rangers? Possible history with the police/etc.

"Shit."
It's the first word out of Levi's mouth most mornings, when he wakes up to the alarm on his Warp Band and swings himself out of bed. He throws his feet over the edge and plants them on the ground, looking down at the talons that have grown in in place of his feet, the start of bird legs. The first night he'd grown more alike to his shifted form it was painful and scary, but he'd still gotten up to do his job in the morning. It's strange walking on them, but he'd learned quickly out of necessity. No more buying shoes, he figured. Even if he had a good job now, he always thought about things like that. Not having enough money, affording clothes and food. He could make it rich, marry some sweet honey up at the top of the towers and never have to think about where his food came from again and he'd still be frugal about it. A girl like that wouldn't find him passable, probably.
Not that he'd want some rich girl in the first place. He stands up, his Venipede (aptly named "Bug") hopping down off his second pillow to follow him and Levi groaned, starting to take the sheets off his bed. "You fuckin' left a big bug stain, you brat," he grumbled to his Pokemon, bundling up his sheets to put in the laundry and making his bed with the new ones, Bug purring to himself at his accomplishment while nibbling on one of Levi's toe claws and tripping his friend up under his feet while he tries to do morning chores. He gets a shower (Bug likes to rinse off too,) brushes his teeth and combs his hair before preening his feathers. Bug gets a nice polish before Levi gets dressed and they head out for breakfast. As a Ranger, he had to be up early to go on his routes around the city walls, but it never stopped him from staying up late having as much fun as he was liable to have with his grumpy mood. Which made him even grumpier in the morning, this morning in particular with a headache and dry out. He'd be late to work if he stayed any longer in his small apartment, finishing his breakfast with a dry swallow and leaving the home with Bug at his ankles. Traversing through the city was easy at this point, though he hoped soon he'd be able to fly up and above all the mess and chaos and actually make it to work on time for once without anybody in his way.
